A Foodie Fantasy Menu!

FoodieFantasy Recently, Culinary Crafts's Mary Crafts-Homer was lucky to be asked by Salt Lake/Park City Bride & Groom Magazine to give a menu that would be perfect for the ever evolving 'foodie' couple.  Well, of course she was excited to get started on this right away!  What resulted was a chic, complex menu of traditional favorites, with surprising twists!  Take the Bruschetta course, for example.  Instead of doing the traditional basil and tomato offering, Mary elected to come up with a trio of bruschettas - Calamata Tapenade with Sweet Onion Agrodolce; Heirloom Tomato and Mozzarella Duxelle; and a Gorgonzola with Garlic-Seared Kale, Sultans, and Pine Nuts.  YUM!  Not only did Mary supply this delightfully layered menu, but she gave other tips as well!  For a true foodie experience, she suggests serving pre- and post-ceremony sips and bites to keep your guests palettes happy!  One of my favorite suggestions?  A canapé station serving Lamb Carpaccio with Shiso and Ginger Scallion Sauce and Roasted Corn Griddle Cakes with Smoked Utah Trout, Caviar, and Creme Fraiché.  Mmm...  Such a fun feature and we are so thankful to SLPC Bride & Groom for asking us to create this dream menu!  If you haven't already, make sure to pick up a copy of the magazine to see all of Mary's suggestions!  Happy reading, everyone!
