When the Honeywell Corporation brought their top executives to Utah for a weekend business conference, they wanted to treat them to Utah’s finest foods. We were thrilled to be asked by their event planner, Offsite Utah, to cater these dinners, each with a distinct theme.
The first evening was an upscale BBQ. Guests were greeted with butler-passed hors d’oeuvres: chilled strawberry and black pepper soup sips; pan fried pork belly with Utah apple mousse on a crostini; lamb lollipops with cabernet reduction; and fresh Utah apple slices with Culinary Crafts’ signature cheeses. Following the reception, guests moved to the dining tent where we had set up chef stations featuring local favorite foods prepared fresh on site, including slow-roasted Snake River Farms pork shoulder, grilled Utah corn, and Rocky Mountain trout.
