The Honeywell Corporation brought their top executives to Utah for a business conference and wanted to treat them to Utah’s finest foods during the weekend. We were thrilled when their event planner, Offsite Utah, asked us to cater their dinners—each with a distinctly different theme. The first evening was an upscale BBQ. The guests were greeted with butler passed hors d’oeuvres: chilled strawberry and black pepper soup sips; pan fried pork belly with Utah apple mousse on a crostini; lamp lollipop with cabernet reduction; and fresh Utah apple slices with Culinary Crafts’ signature cheeses. Following the reception, guests moved to the dining tent where we had set up chef stations featuring local favorite foods, prepared fresh on site, including slow roasted Snake River Farms pork shoulder, grilled Utah corn, and Rocky Mountain trout.
