Inspired By “Mindful Eating”: The Miraval Spa Cookbook

Today, we have a guest post from our wedding planner extraordinaire, Holly Fowler, who wrote a little bit about the inspiration we received when working with a recent bride and the cookbook she gifted us. Take it away, Holly!
"We had the great pleasure of creating the wedding day for an employee of the Miraval Resort and Spa which sits at the foot of the sprawling Santa Catalina Mountains in Tucson, Arizona. The bride, Kelley, was a treat to work with and graciously gave us creative control to design the food around the 5 different states that she and her husband-to-be, Tyler, have lived in during their courtship: Utah, Oregon, Washington, Arizona and Colorado.
Kelley was so gracious to share with us the cookbook from the spa “Mindful Eating” which we used for inspiration on some of our menus recently - and we LOVE the mission statement of Miraval! 'Since its beginning in 1996, Miraval has upheld a powerfully simple vision: life is more meaningful and enjoyable when one’s physical, emotional, spiritual, social, and intellectual components are in balance.' We couldn't agree more! Plus, this attention to detail and the overall well-being of people made for some excellent recipes.
We love the Pumpkin Cornmeal Bread, Cilantro-Crusted Scallop with Cumin-Scented Black-Bean Cakes, Corn Salsa and Smoked Red Pepper Coulis and the Caramelized Three-Onion Polenta Lasagna with Wilted Baby Arugula, Goat Cheese, and Ratatouille Sauce. Actually, we loved so many recipes in 'Mindful Eating' that we used its inspiration to create the menu for our recent UBB inspiration shoot (which you can see here.)"
