Local Cheese And Apple Hors D’oeuvre

Here at Culinary Crafts we use local and fresh ingredients for all of our dishes. (Except when our clients want a dish that is asian or mediterranean influenced, because lets be real, it’s hard to find some of the ingredients locally for those dishes!)

For this hors d’oeuvre we only used 3 ingredients; apples, cheese, and honey.

We love using local honey because it is raw and unfiltered. Processed honey takes out the amazing flavor honey have to offer, so buy local! Wherever the bees are located and getting their pollen from is how the honey will taste. If the bees are up in wildflowers, the honey will have a floral taste to it. Same with if they are by a pumpkin patch, they will have the hint of pumpkin.

Some of our favorite cheeses is Beehive Cheese, Heber Valley Cheese, Deer Valley and our own cheeses we made in-house. Pictured is the Barely Buzzed cheese from Beehive Cheeses, located in Northern Utah. Beehive cheese sources the milk used in the cheese from Wade’s Dairy, also in Northern Utah. The Barely Buzzed cheese is a white cheddar cheese with an espresso rub on the outside.

They get the rub exclusively make for them from Colorado Legacy Fine Coffee. It is made from espresso and lavender with subtle notes of butterscotch and caramel. Barely Buzzed is then aged in their humidity controlled facility and moved to two different temperatures during the aging process to develop texture and flavor.

We love Mountainland Apples in Santaquin, Utah. For this hors d’oeuvre we used a delicious granny apple.

Below is our really popular local cheese and apple hors d’oeuvre. Utah apples are harvested in the late Summer/Fall. Apples hold really well in a really cold storage but they’re at their best when you get them at a farmers market or a orchard because they’ll be extra juicy. Because of the cold storage, we’re able to serve this delicious hors d’oeuvre year-round.

We used clover honey from Miller Farms which is made in Salt Lake City, Utah. The hives were surrounded by clover fields, which is where they got the pollen from and it’s affects the taste.

We love this hors d’oeuvre because you get the sweetness from the apple and the savory from the cheese which has a little bit of fat in it so it coats your mouth, and then the honey gives it a nice extra flavor. You can garnish it with a micro green or herb. We used thyme in these pictures.

Culinary Crafts’s Next Pop Up Restaurant is Around the Corner!

Culinary Crafts is SO EXCITED for our next Pop Up Restaurant!  We are happy to be partnering with Wasatch Community Gardens for a very special “pop-up” restaurant in celebration of Earth Day on April 22nd, 2016.  And, we are hosting it at The Falls Event Center venue in Salt Lake City, which we are thrilled to show off to all of you!


Our 6-course menu has been created especially for this Pop-Up and will feature many locally sourced items, as well as a few surprises! This unique feast will only be offered for one remarkable evening – The restaurant pops up for a night and then disappears, offering a once-in-a-lifetime experience.  (You can get your tickets here.)  Another bonus?  Wasatch Community Gardens will receive a portion of the event proceeds.  We love that their mission is a perfect match for the importance of Earth Day as well as the importance of fresh and delicious food!

New Venue: Land Cruiser Heritage Museum

Culinary Crafts had the honor of catering Toyota’s “Ever Better Expedition” Tour recently and got to check out a new venue at the same time too!  The Land Crusier Heritage Museum, located in downtown Salt Lake City, is a unique, urban venue setting and although it may be subtle on the outside – make no mistake your guests will be blown away when they walk through the door.  Check it out!


This wide open warehouse space boasts classic exposed brick and showcases the ultimate back-drop, a beautiful, mint condition collection of Land Cruisers.  Spanning across the history of the Land Cruiser from the late 1950’s to the present, it is a sight to behold and will make for an absolutely unforgettable event experience.


This place is great for any type of event and has a seating capacity of up to 140 for sit down dinners and over 200 for reception style events.  And how fun is it that your guests can check out some AMAZING land cruisers during the event too!



For this event, this venue was a perfectly versatile setting to create a fun and casual cocktail reception as guests toured the museum – plus we served a variety of local Utah beers, which the guests loved!



After the cocktail reception, we invited guests to enjoy an elegant formal plated dinner menu.  How great does this place look?



Culinary Crafts made sure to keep guests full on delicious eats!  So, we served an array of local foods from grilled Rocky Mountain red trout to toffee cakes with Utah grown pistachios.  Yum!

Farmers Market Sign for Social MediaOur Farmer’s Markets are easily one of Culinary Crafts’s favorite new events!  We love being able to interact with our community every week, host amazing local companies, and share Culinary Crafts’s products with you!  So, for Labor Day weekend, we are kicking it up a notch an inviting you and your family to spend the day with us.  Join us for breakfast where we’ll be serving Homemade Waffles and Syrup and then stay for Lunch as well for our Best-Ever Burgers.  We’ll also have a free bounce house, face painting, lots of farmer’s market booths and our AWESOME food fair too.  We hope to see you there!  It’s going to be tons of fun!!!  Happy market-ing, everyone!

Art of Catering Conference: Boots, Buckles, & BBQ!

Today, I am excited to bring you one of the AWESOME events that Culinary Crafts hosted for Catersource‘s Art of Catering Conference that was held in Salt Lake City earlier this month!  Boots, Buckles, & BBQ was a favorite because we got to host it at This Is The Place and got to showcase our LOVE of BBQ!  It was so much fun, check it out!


Even though it was a rainy day, the weather was welcome in this summer heat!  Love this venue too!


To keep with the theme, we used red bandanna inspired linens and our recycled wine glass votive covers.  Plus, our servers “cowboy-ed” up too and passed the guests delicious local brews!


One of our fine food offerings is our Smoke Fresh Utah Corn on the Cob with a variety of flavored butters.  Yum!


Love the festive vibe of this party! Culinary Crafts aims to create an unforgettable experience for everyone who attends our events!


Another one of our dishes?  Chef Torched Ancho Rubbed Grass Fed Utah Beef Tri Tip with Farro, Arugula, and Dried Cherry Salad!


And, of course we wanted to take this event over the top, so we roasted a whole pig on site!


We also served up Charcoal Grilled Rocky Mountain Trout with Utah Green Apple Relish and Roasted Utah Summer Squash and Zucchini and another with Pulled Snake River Pork Shoulder with Ryan Crafts’s Blood Orange BBQ Sauce, House-Made Cornbread Muffins, and Local Greens, Utah Apricots, Plums, Pistachios, and Goat Feta with a Ginger Chili Pepper Dressing.  AH-MAZING!


Plus, we planned one-of-a-kind activities like bull riding and lasso lessons with a bona fide cowboy!AoCF_RanchEvent9


The Ugly Valley Boys set the mood for the event with up tempo tunes!  Such a fun night!


And, of course, we served dessert!  We made a selection of Homemade Southern Style Shortcakes with Fresh Local Peaches, Rhubarb and Blackberries with Vanilla Rum Cream AND we had a Old Fashioned Float Station with Jackson Hole Sodas.  So good!

We love planning ALL kinds of events but this one was so very special because we got to treat our fellow caterer peers across the nation! Happy planning, everyone!

Announcing Culinary Crafts’s Pop Up Restaurants!

We are SO excited to announce Culinary Crafts’s Pop Up Restaurants are starting this month!  We have a special introductory price for this inaugural first 10-course dinner – and be prepared to have your mind blown!  Check out the details below!


Culinary Crafts, awarded Utah’s best caterer for 12 years running, is partnering with Snuck Farm in Pleasant Grove for a very special “pop up” restaurant featuring a farm-to-fork menu. This unique 10-course feast, inspired by the produce grown at Snuck Farm, will only be offered for one remarkable evening. The restaurant pops-up for a night and then disappears, offering a once-in-a-lifetime experience.

This special evening will be the inaugural event at the beautiful Snuck Farm facility, which is surrounded by majestic mountain peaks, and will feature impossibly fresh ingredients grown within thirty feet of the dining table. This is a must for foodies!

The moment when lettuces bounce off your plate, the corn is succulently sweet, tomatoes have the perfect balance of acidity and ripeness. Don’t deny yourself that experience in the hands of world-renowned chefs in a spectacular, natural setting.

Just some of the features of the menu are Utah trout smoked over cherry wood with corn pudding, New York strip steak with tarragon mushroom béarnaise, chicken roulade with a peach and cashew stuffing, a flight of local cheeses from four different local cheese makers, and a roasted strawberry chocolate-chip shortcake with chocolate whipped cream.

Special live music will be a highlight of the evening, as well as a tour of the farm and a chance to meet the growers, Page and Brian Westover. Mary Crafts, the dynamic president of Culinary Crafts, will also be on-hand to meet and greet you.

In order to attend this exclusive event, you must purchase your tickets in advance. Tickets are very limited, only 50 seats are available. Utterly Romantic Wedding Featured on Martha Stewart Weddings!!!

Firstly, I have to say that we here at Culinary Crafts ADORE this wedding.  It was stunning; it was breathtaking; AND it was epic – it even made it through a torrential rainstorm with flying, gorgeous colors!  But you know what else is even MORE amazing about this wedding?  Martha Stewart Weddings TOTALLY agrees with us – and featured it!!!  We are so thrilled and wanted to share this gem with you too!  Thanks to the design and planning visions of Michelle Leo Events, the fantastic photography of Alixann Loosle Photography, the floral musings of La Fête (for the bride’s bouquet) and Urban Chateau Floral for all other florals, the natural beauty of High Star Ranch, and of course, the food by Culinary Crafts – this wedding was the best!  Check it out!


For starters, Culinary Crafts served the guests an Artisan Bread Plank with Vanilla Bean-Cranberry, Thyme Rosemary Garlic, and Whipped Sweet Butters.  We paired that with a salad of Local Mix Greens, Utah Apples, Beehive Cheddar, Nut Brittle, and Cider Vinaigrette.  YUM!  The bride loved that we incorporated local Utah ingredients in every dish!


We also served a dual entree of Center Cut Filet with Forest Mushroom Ragu and Grilled Utah Mountain Red Trout with Grilled Local Peaches.  And of course there were fabulous signature drinks: a Bourbon Ginger Cider and a Vodka Gingered Peach!


For dessert, not only was there the STUNNING hand painted wedding cake, which was a delicious pumpkin cake with cream cheese frosting, from One Sweet Slice, but we also served our House Made Stuffed Glazed Cider Donuts with a side of Hot Apple Cider.  SOOOO good!


I love this elegant menu card from Moira Designs!  Plus, I love that the guests were all treated to a pair of local Salted Caramel Chocolates as their wedding favor.  So cute!


Isn’t her dress stunning?  The bride chose a custom gown by Samuelle Couture and my favorite part was the deep-purple underskirt that added an extra pop!


Such a pretty pair!


Like I said, torrential rain storms threatened to make this wedding horrible, but luckily, the team of pros on site made sure that this event was still stellar – even when they had to go to an emergency Plan B!


Isn’t this bouquet divine?  Allison Baddley of La Fête is so talented!  And what an invitation!  Moira Designs made sure the guests were ready for a truly exceptional and elegant event by setting the tone with these beauties!


I love the palette of golds, deep plums, lilac, and peach.  So romantic and refined!  The design by Michelle Leo Events is so beyond perfect and the floral chandeliers that Urban Chateau Floral created are one of my favorite parts of the day!


Such a beautiful reception!  I love the long tables and pretty candlelight that really set the romantic mood for dinner.


This wedding was truly stunning and rainstorm actually ended up adding another level of amazing to this beautiful and unique event!  We are so happy to have been a part of this day and even more thrilled that Martha Stewart Weddings featured it!  Happy dreaming everyone!

Wedding Trend: A Casual Beer Garden Party

Today, I am so excited to share this AWESOME laid back wedding that Culinary Crafts did recently!  Not only was it beautiful, but we created a beer garden complete with beer tastings for guests one of our favorite local breweries.  So COOL!  It was so much fun and the out of town guests LOVED it!  Plus, it showcased the amazing local brews that we have here in Utah.  Check it out!


Memorial House is such a great venue and we loved this welcome chalkboard with paper fans for favors.  Plus, it set the tone for the laid back beer garden vibe.


This reclaimed wood signage was awesome and fit the space perfectly!


Our beer garden showcased three local Squatters brews, an Organic Amber, a Pale Ale, and a Golden Ale.  All great choices!


We created an outdoor lounge for guests to relax and mingle.  A perfect, casual wedding setup!


Guests could try one (or all three) of the beers and then get their favorite to drink while perusing the “pub style” bites we created to go along with the beers!


Culinary Crafts served House Made Soft Pretzels with a variety of mustards and cream cheese, Miniature Fried Pickles with Ranch Dressing, and Miniature Corn Dogs with Classic Ketchup and Mustard.  SO YUMMY!



We also served some of our Culinary Crafts favorites for butler passed hors d’oeuvres as well.  Our Coconut Crusted Shrimp and Cheese Stuffed Cherry Tomatoes were great light fare for this summer party!


We couldn’t stop there, though.  We also had a selection of House Made Breads, Local Artisan Cheeses, Fruit, Hummus, Roasted Vegetables, and Olives.  The guests really loved all of the variety!


Lastly, in keeping with the beer garden theme, one of the entrees we served were Philly Cheesesteaks on House Made Buns and Pomme Frites with Garlic Aioli and another local favorite, Fry Sauce!

This wedding was such a great example of how couples can make they day a little different and show their guests a one of a kind experience!  We loved creating this beer garden and all of the fun “pub style” foods to go along with it!  Happy planning, everyone!
